Hennessy Appreciation Grows 2014: The First Installment at Danga Bay, Johor Bahru



Hennessy X.O Conquers Johor with the World’s First and Original X.O Cognac







Life is made a little sweeter with all the fine things in life. A recent voyage took me on a gastronomical journey all over the world at the first installment of the Hennessy X.O Appreciation Grows 2014 that took place at Danga Bay, Johor Bahru from the 16th to the 18th of April 2014. From my previous post here, distinguished guests and media experienced the ultimate Hennessy experience through an evening of fine cognac paired against the culinary brilliance of three times James Beard semi-finalist for Best Chef: Southwest and “Iron Chef Winner”, Chef Viet Pham.


The journey took off with a short air trip to Johor where the magnificent dinner was held for three days consecutively. Hennessy X.O Appreciation Grows is a series of intimate engagements aimed at creating a core of true connoisseurs of the World’s Number One cognac through immaculate gastronomic experiences enhancing guests’ true knowledge, understanding and appreciation of Hennessy X.O.


As this was my first experience at the Hennessy Appreciation Grows 2014, it was pure adrenalin running through my veins that evening as I put on my best evening frock to set sail on the event themed the ‘Spirit of Conquest’. Gastronomical connoisseurs set sail in an elegant journey charting the birth of Maurice Hennessy’s Original X.O in 1870 in France, to its global conquest of iconic countries around the world that evening.







We had a short cocktail hour where guests were then invited to join Mr. Chong Wai Keng, Moët Hennessy Spirits Brand Ambassador for an intimate technical tasting of Hennessy X.O, where guests deepened their appreciation for the world’s most loved cognac Hennessy X.O.


As we were ushered the holding lounge of the ‘ship’, I couldn’t help but notice that there were screens around the room. Our Spirit of Conquest was further heighten by the replication of the dining room of an early 19th century steam liner, filled with Chesterfield sofas, paintings from Maison Hennessy, illuminated with chandeliers, and completed with a vibrant arrangement of flowers on each table.







As the event kicks off, the screens come alive as we set sail off into our voyage that evening with our host for the night, Mr. Will Quah. We set sail off for France, the birthplace of the Original X.O in 1870 as our ‘ship’ moored in France next to its famous landmarks.

“Just as Hennessy X.O took to the high seas in 1872 to explore new horizons, this year's Appreciation Grows platform explored new grounds, venturing to Johor for the first time - providing connoisseurs there with more than just a food and cognac pairing, but rather an unforgettable platform for where their appreciation for life’s opulent experiences deepens” expressed Mathieu Duchemin, Managing Director of Moet Hennessy Diageo Malaysia.







Our first course of Sweetness on Seine makes its debut on the romantic notion of France. Sweet diver scallops lightly roasted over embers are accompanied with an onion almost ‘burnt’ cream and is a romantic starter to tease our appetite for more. The subtle caramelized flavor of the onion burnt cream is very well controlled as it did not over power the gentleness of the scallops. The melodious flavors of the sea and the onion meld beautifully with the Hennessy X.O cognac’s smooth and luscious notes.


And what better way to bring a little France to us than a performance of French Cabaret… oo la la! These ladies had almost everyone’s attention that evening for their elegant and glamorous dance routine and costumes.







Moving along from the chic French waters, our Hennessy X.O gastronomical journey set sailed to East towards the Orient where China sets the next course with Yellow River Richness. Chef Viet’s ingenious use of Chinese classic ingredients of mushrooms and duck eggs is obviously a tribute to the Chinese cuisine. The dish looked contemporary and reflects a gorgeous barely poached duck egg yolk sitting on a bed of intense shitake mushroom mousse. The mousse has a luscious silky texture albeit its saltiness. The lustrous egg yolk flows over the mousse, making it even richer in flavors. Every spoonful lends a robust earthy note with bits of crunch from the lightly toasted sprouted grains. The richness of the dish seemed to intensify the tasting notes of the elegant cognac, served neat, to another level, rendering an even longer finish of spice and fruits.


Our Oriental excursion was accompanied by a mesmerizing performance of Shanghai jazz.







After its stint at the East, the Spirit of Conquest headed back West to the land of the free, America where our third course of the night awaits. Arriving in a period of American history- known as the Gilded Age, Hennessy X.O made its timely debut, as an elegant and sophisticated way to enjoy values of luxury and heritage. The Mild Hudson, a tribute to the Great American Dream, showcased a luscious piece of sea bass wrapped with savoy cabbage and sauced up with tiny black pearls of Osteria caviar. The sweet delicate sea bass is partnered with fondant potato and pretty pink pickled shallots. The salty burst of caviar pearls matched well with the powerful complexity of the Hennessey X.O cognac.


A jazz quintet belts out smooth and silky tones of jazz as guests enjoyed the third pairing of the night with the finest cognac.







The Spirit of Conquest moves on and arrived at Italy where she welcomed the Original X.O with open arms in 1893. Italy, famed for its passion for culture, fashion and food is represented by Spicy Mediterranean, our fourth and final savory course. A dish that truly represents Italy, Chef Viet serves crispy crumbed chicken parmesan topped with a vibrant tomato and mushroom ragu to be paired up with the Hennessy X.O.  Though not as elegant as the other courses, the rich tangy sauce does provide a strong match with the cognac.


What won the hearts of many was the outstanding performance of an opera performance that had the whole room experience the passion of Italy together with the cuisine and the Hennessy X.O.







As the night draws near, the Spirit of Conquest set its course back to East towards the Land of the Rising Sun where traditions and customs exist seamlessly within modernity - just like Hennessy X.O, a perfect counterpoint for all those who acknowledge that with time, Appreciation Grows. Our gastronomical journey completes its course of the night with Osaka Bay Freshness, where Japanese plum Umeboshi sorbet is married with Yuzu mousse. A match-made in heaven, the salty sweet notes of the plum sorbet is heightened with the vibrant tang of the creamy yuzu.


The triumphant voyage with Hennessy X.O concluded with a spectacular Japanese drum performance by the Wadaiko Syo troupe that ended with a big bang.

A night to be remembered, this year’s Hennessy X.O Appreciation Grows 2014 truly takes everyone on a journey of gastronomic and entertainment around the world. Echoing the elegance and class of the finest cognac by Hennessy, the Hennessy X.O Appreciation Grows 2014 exudes no boundaries but rather a class finer than the finest of its own and sets the bar for future installments to come.

The Heart of Cognac Experience by Rémy Martin @ Maison Francaise



The Heart of Cognac Experience debuts in Malaysia!








Going luxe, my next excursion had me experiencing a cognac experience the Rémy Martin way. Hundreds of distinguished guests, media, industry players and discerning tastemakers are invited by the House of Rémy Martin to experience ‘The Heart of Cognac Experience’ held at Maison Francaise recently.


Rémy Martin, French winemaker, founded his exquisite cognac business in 1724. Specializing in Cognac Fine Champagne, its cognac products are all aged between 10 and 37 years. In fact, it is the only company that utilizes the highly prized and rare grapes from the most respected regions of Grand and Petite Champagne in the Cognac region. Through this exclusive experience, we explored the craftsmanship and dedication the House of Rémy Martin goes through to produce the elite of cognacs of the world.







Choi Yen, Xiang and I arrived a little early and happily took a quick peak at the amazing cognacs under Rémy Martin. Each Rémy Martin cognac held its own grandeur from the Rémy Martin V.S.O.P to XO Excellence to the most expensive and rare Louis XIII. There is even a limited edition of Rémy Martin V.S.O.P featuring Jolin Tsai.


The priciest of the lot is Louis XIII, a staggering RM8,600 for a bottle. 100% Grande Champagne, we were told that it took a 4th generation cellar master to blend up from 1200 Eaux de vie that is almost up to a 100 years old.

While waiting for our cognac experience, we hang out to taste Rémy Martin inspired cocktails. As we sipped Rémy Cucumber, Centaur Spice and Rémy Kaffir, we caught up with friends and of course watch our bartender whipped up these cocktails.


My favorite has to be the Rémy Cucumber, utterly refreshing and fabulous. More on the sweeter end, the cocktail has found its match of pairing cucumber with Rémy Martin cognac beautifully. Made from Rémy Martin V.S.O.P., cucumber syrup, apple juice and lime juice, I had two delicious glass of this one!


Centaur Spice had Rémy Martin V.S.O.P. with ginger ale and angostura bitters while Rémy Kaffir was made from Rémy Martin V.S.O.P., kaffir lime, grapes, lemon and ginger beer.







We were ushered in a room with a beautiful wall of eaux de vies featuring from 5 years to 20 years. Once in, we were greeted by the Rémy Martin Brand Ambassador, Brandon. He proceeds to enhance our knowledge with the history and the process on how Rémy Martin cognacs are made. Distilled thrice, the complex process is then finished and left to age from a minimum of 10 years before they are bottled and sold.


We get to play and experiment on how to get the perfect blend for Rémy Martin V.S.O.P. from our 4 year old, 8 year old and 14 year old eaux de vies.  I had my blend of 40ml of 8 year old, 4 ml of 4 year old and 6 ml of 14 year old tested by Brandon and was told I am a little off. The correct blend should be 35ml of 8 year old, 10ml of 4 year old and 5ml of 14 year old. Oh well, this was certainly an experience. I even learnt to experience the cognac by taste, sight and aroma.

Choi Yen and Xiang too took on the challenge for the blend.







We proceeded to move into another room replicated after a Rémy Martin’s cellar. It is here that we got our taste of Rémy Martin XO Excellence and Rémy Martin Club. While the Rémy Martin Club is intense in flavor, the Rémy Martin XO Excellence shows off more finesse with its velvety and rich finish. We were told that once the cognac is bottled, it stops its ageing process and under certain controlled environment, the cognacs may literally last for a very long time.


Brandon also gave us a demonstration on how cognac is extracted from its barrel.







With the evening concluded, I went home armed with more knowledge about Rémy Martin cognac and its history. It takes time to and classical methods to produce a grand cognac and the House of Rémy Martin continues to respect their distilling traditions to this day.

Elegantology Gallery & Restaurant, Publika: A Martell Cognac Pairing Dinner at Elegantology!



My First Martell Cognac Pairing!







Exclusive and luxurious runs through the mind when it comes to both Martell and Elegantology Gallery & Restaurant! One fine evening, a few of us had the luxury of savoring an exclusive and opulent Martell Cognac pairing at Elegantology. That’s not all, the dinner was also part of Reality Bites, a soon-to-be-air program. Stay tune for the show!







Elegantology comprises of a couture gallery featuring exclusive men’s fashion and lifestyle collections created by reputable local designers and a haven for gourmands helmed by celebrity chefs Johnny Fua and Sherson Lian. A fashionable alliance of fashion and food, Elegantology is a collaboration between noted Malaysian fashion designer Beatrice Looi and the oldest cognac house Martell in effort of developing a creative space for rising talents stemmed from a mutual goal of supporting the local creative platforms of fashion and gastronomy.


The moment one walks in, the ambience at Elegantology oozes with elegance and class. Designed with various sections themed with rich décor, the mix of décor is a masterpiece of opulence. Colours are boldly match with deep rich hues of dark mahogany, navy blue, cream colors and luscious gold with hits of red. Gorgeous crystal chandeliers strung above together with gold frames. Plush sofas mixes with leather ones. Spread across the whole space are pieces of elegantly tailored menswear injected with modern touches. A long bar sits on one end nearly opposing an open kitchen where chefs are seen discreetly cooking up a gastronomic menu for guests.







As this was a Martell Cognac pairing, our evening kicked off with dainty and delicious canapés prepared by both chefs Johnny and Sherson paired with Martell VSOP and Martell Cocktails. On a personal note, I really enjoyed the Martell Cocktails as both were smooth and fresh.









Dinner was hosted by Christophe Pienkowski, Brand Development Manager for Martell. With a chef background, Christophe was a charmer with plenty of knowledge of Martell Cognac. We were thoroughly briefed with the history of Martell and the various cognacs we had paired with various courses that evening.







Amuse Bouche of White Gazpacho with Grapes and Almonds served with Salmon Tartare

A bite that whets the appetites, we enjoyed this with a first taste of savory salmon tartare before downing the shot of silky nutty white gazpacho to freshen up our palate.







Hokkaido Scallop, Cauliflower Puree, Fish Skin Cracker & Fined Mixed Mesclun

A large Hokkaido scallop, nicely seared on both sides, is paired up with ultra-smooth and creamy cauliflower puree. An abundance of sweetness of the sea with savory sweetness of the cauliflower elegantly punched up with salty globules of salmon roe filled my palate. Fish skin cracker and mixed mesclun provided some textures to the 1st teaser.








Martell Cordon Bleu

Both were paired with Martell Cordon Bleu, a legendary cognac that has a rich golden copper hue. As both courses featured the ocean’s flavors, it goes really well with this complex and yet mellow cognac. I had my cognac on the rocks which exuded a vibrant palate with the seafood. A nice long finish with various notes is savored in the Cordon Bleu.







Foie Gras Veloute with Smoked Garlic Toast & Citrus Tomato Salsa

Velvety and luscious bisque executed with such finesse sums up the Foie Gras Veloute. A spoonful of this decadent goose liver swirled with cream sent neurons of flavors to my mind. Accompanying the bisque are crispy thin smoked garlic toast and a little tomato salsa to balance out the richness of the nutty and creamy liver sauce.







Martell Chanteloup Perspective

I can’t help but to notice the beautiful bottle of the Martell Chanteloup Perspective etched with silver design and the prestige Martell logo. With a slightly darker hue than the first cognac, this extra quality cognac proves to have a smoother palate filled with fresh and dried fruits with long finish. It does paired will with the luscious goose liver veloute since both are extremely rich and powerful in flavors.







Sorbet of Passion Fruit Granita

Our palate cleanser was tangy and fresh with bits of passion fruit pulp and seeds for crunch.







US Black Cod with Butternut Pumpkin Gnocchi, Chili Oil & Classic Cream Carbonara

Though I did not choose this main course, I couldn’t keep my eyes of it. It certainly looks good enough with a thick piece of cod seared and topped with golden pillows of pumpkin gnocchi, salmon roes and a pool of creamy carbonara sauce.







Master Kobe MB10+ with Natural Beef Jus, Fried Glutinous Rice with Muscovy Duck & Arugula Leaves

The pièce de résistance of the dinner… the holy grail of beef with a marble score of MB10+ is served with creamy beef jus and morel mushrooms. Sitting on the side in a tuna-look-alike can is fried sticky glutinous rice amped up with bits of duck, mushroom and fried shallots. An odd pairing of East meets West but I do admit to like both individually. Leaves of arugula lend a bitter edge to the dish.








Martell XO

The color is really deep and dark copper and has a spicy aroma with rich fruit flavors. It has a silken finish and lingers beautifully on the palate. A great pairing with beef as the XO is rounded and powerful with an elegant note. I also like the glutinous rice which has a light sweetness that seems to be a great match with this Grand Champagne eaux-de-vie cognac.







Baked Cheesecake with Fireworks Crumble, Kumquat Confit in Tarragon Infused Syrup

A deconstruct inspired baked cheesecake, our desserts had our taste bud popping like fireworks in our mouth. Immediately, I recognized pop rock candy in the firework crumbles as I use to enjoy these candies during my childhood days. Silence at the dining table meant this dessert was a crowd pleaser and I can see everyone’s plate polished clean of the cheesecake with an interesting kumquat confit.

We enjoyed our dessert with the elegant and very structured palate of Martell Chanteloup Perspective.







My first cognac pairing dinner and it was quite an experience to be able to have a deeper insight on the renown and oldest cognac house in France. Dinner was equally beautiful and both Chef Johnny and Chef Sherson managed to create a bold and creative menu to be paired up with the exclusive Martell cognacs. Thanks to Martell and Elegantology for the lovely dinner and I am looking forward to more creations from both chefs since the menu at Elegantology changes every two weeks and also Reality Bites from AFC!
