Kampachi @ Plaza 33

Teppanyaki by Chef Ambon Ruslan

For a sensory and sizzling dining experience of Japanese cuisine, catch Chef Ambon Ruslan’s fiery teppanyaki action at Kampachi from now till August 15. Available at Kampachi at Plaza 33 or Kampachi at Troika, diners are in for a sumptuous treat of teppanyaki set menu from Chef Ambon.

Renowned for fine Japanese cuisine, Kampachi has always been a popular dining hotspot for authentic Japanese food. With several outlets spread out in Kuala Lumpur, Petaling Jaya and Penang, each Kampachi restaurant is set in a class of its own.

Gorgeous modern and contemporary ambiance injected with Japanese design and materials, Kampachi offers a Japanese fine dining experience with elegant ambiance and exquisite Japanese food with an amazing list of Japanese sakes and wines.

Kampachi at Plaza 33 is beautifully spacious and elegant. Diners can opt to dine in the main dining area, sushi bar or one of the many private rooms available. There is a teppanyaki corner as well where Chef Ambon will showcase his teppanyaki culinary actions.

With two Teppanyaki set menus available, one can select from the option of savoring 4-courses or 7-courses set menu. To personally catch Chef Ambon in action, reservations are highly recommended.

Chef Ambon kicked off the teppanyaki course with some flaming action as well as his showcase of the art of juggling and flipping utensils. Impressive and a great ice-breaker to start the meal, Chef Ambon has certainly mastered this skill well. I could barely take my eyes off his notable skills!

One can also opt to savor the teppanyaki with the extensive list of sakes ad wine available. For our first course, a chilled sake of Benten Musume Kimoto Junmai was recommended.

As we watched our first course being prepared on the hot teppanyaki, the aroma of the dish was certainly tantalizing the air and our nostrils with much delight. Chef Ambon’s take of a hot salad was unique as we watch our lettuce being charred on the hot grill.

Beautifully presented, the Hot Caesar Salad with Anchovies and Egg tasted as lovely as its presentation. The smoky charred aroma on the crisp lettuce, now warm, was such a delightful take on a salad. A thick and creamy Caesar house dressing married the warm lettuce with fluffy scrambled egg, anchovy and generous shavings of parmesan cheese deliciously.

For the next dish of Grilled Salmon wrapped in Foil, Chef Ambon seared the salmon before wrapping up all the ingredients in a foil to be baked on the teppanyaki.

The aroma that first escaped from the package was heavenly. Fragrant with a citrusy note, the salmon was moreish with soft and creamy leeks, tangy cherry tomatoes and the light citrusy soy-based sauce. While the fish was nicely cooked, I prefer mine slightly under done as a matter of personal preference.

Chef Ambon proceeded to then sear two neatly trimmed lamb racks on the hot grill for the next course.

Cooked perfectly, the Grilled Lamb Rack & Vegetables with Chef Crafted Sauce was delicious and succulent in every bite. Served with sautéed vegetables and mushrooms, the lamb had a lovely smoky aroma which is further enhanced by the rich sauce. Do let Chef Ambon know your preference of lamb doneness just like I did.

We had the lamb paired with warm artisanal Fusozuru Junmai Nigori sake. This unfiltered sake is simply marvelous on the palate. A cloudy appearance enhanced the creamy note with light sourness that lingers beautifully in the mouth. This sake paired so well with the meatly lamb rack.

To end the savory courses, the Japanese Clam Miso Soup hit all the right spots of much comfort pleasures. The essence of the clam paired so well with the miso, making the soup deliciously moreish. The clams were also tender and yummy.

Together with the Crab Meat Fried Rice, our teppanyaki meal was pretty much faultless and pleasurable. A solid breath of charred and garlicky notes, the fluffy rice was well-studded with sweet crab meat and egg.

The finale of Chef Ambon’s meal was his Signature Pancake Ice Cream. Dessert was superb!

Thin pancake enveloped a block of vanilla ice cream filled with crunchy bits and finished with whipped cream and strawberry was the perfect ending to our teppanyaki affair. Our dessert was accompanied by Yamada Jyuro, Japanese plum wine that has a juicy fruity plum sweetness.

Chef Ambon’s Teppanyaki is available for lunch and dinner with options of 7-courses (RM288nett) and 4-courses (RM188nett). This promotion is available till 15 August 2018.

DO also look out for Kampachi coming Kanpai! with Sake Masters from Japan, taking place on 3 August at Plaza 33. It is an exclusive Drink-All-You-Can sake event with some of the finest artisanal Sake and delectable mini-buffet for pairing.

Sakura Promotion @ Genji Japanese, Hilton Petaling Jaya

Sakura Spring Blossom Food Fest & New Signature Dishes

Back at Genji Japanese Restaurant at Hilton Petaling Jaya for a taste of their Sakura Spring Blossom Food Festival! Available until 31 March, 2017, diners should not miss Chef Richard Teoh’s gastronomic dishes inspired by the prettiest season in Japan. Hoping to paint our culinary town with lots of spring dishes in celebration of the pretty pink and white flowers in bloom, diners are treated to some of the freshest and tastiest Japanese dishes this season.

In celebration of Hanami, Chef Teoh’s inspiration are beauty as well as scrumptious dishes prepared with as little cooking method as possible to showcase the fresh and bountiful ingredients of the spring season. Genji Japanese Restaurant has always been a long-time favorite when it comes to Japanese cuisine in the city. Serving a la carte to buffets on the weekends, Genji has been serving sumptuous Japanese cuisine to diners since two decades ago.

The award winning restaurant has even air flown in fresh Sakura flowers and its season’s freshest ingredients in tribute to this promotion. Expect the spring season’s bountiful ingredients in the menu such as sea bream, shellfish and a variety of sansei (mountain vegetables).

Spring season denote lightness and floral prettiness. Celebrating the season’s attributes is Maguro Nano Hana Nutta Ae (RM39). Glorious cuts of the finest tuna paired with blanched stem of rape blossoms and miso sauce. The subtle wasabi hint in the miso sauce is really clever, teasing our palate together with the rich creamy and nutty miso. The delicate bitterness in the rape blossom added another dimension of flavour to the tuna and sauce. So well controlled with finesse in flavours…

Thinly sliced sea bream served with ponzu sauce is beautifully presented in Tai Usuzukuri (RM130). The soft sweet nuances of the fresh sea bream is a joy to savor. What was unexpected was the bold heat in Chef Teoh’s ponzu sauce that gave the dish a kick of flavours. It’s like watching fireworks in spring season for the dish.

Sashimi Moriawase Tokuijo (RM380) is Genji’s premium set of chef’s choices of sashimi. Only the best premium cuts get on this huge platter and we were definitely pleased with the Toro, Yellowtail, Salmon, Aji and Scallop. The sashimi were thickly cut, adding sublime touches to the already sumptuous raw fish.

The Toro melts-in-the-mouth while the creamy and divine Yellowtail was sensational. Ajj or Spanish mackerel is one of the most underrated fish, simply because it has such wondrous rich flavours from its oil and is healthy as well. The usual Salmon and Scallop, needless to say, are of the finest quality.

A bold creative piece of dragon is cleverly presented in Unagi Avocado Ura Maki (RM72). The reversed roll of avocado is draped with thick slices of caramelized smoky eel and seaweed. Each piece is creamy, smoky, sweet and savory on the palate.

More eel to satisfy those who loves unagi and it’s definitely a match made in heaven in Unagi Chawan Mushi (RM28). Generous cut of thick smoky, sweet and savory unagi goes so well with the wobbly soft steamed egg custard. There were also gingko nut and crab in the custard. Comforting in every spoonful…

For mains, the Wagyu Beef Nano Hana Maki (RM120) turned out to be a fine choice, especially if you are a fan of the luscious wagyu beef. The tender wagyu beef is rolled with the blanched spring rape blossoms and cooked on the teppanyaki with the moreish butter garlic soy sauce. Served with more vegetables and crispy garlic chips, the dish is deliciously delectable.

For non-beef eaters, one can opt of the Kue To Enoki Teppanyaki (RM85) or grilled grouper with enoki mushroom in yakiniku sauce. The firm grouper meat goes well with the robust sweet and savory yakiniku sauce. There were plenty of enoki mushrooms as well as other vegetables to balance up the fish.

Rape blossoms are delicious when prepared well. Despite its subtle bitterness, the vegetable has a crisp texture and is a delicacy to savor. Making another appearance in Nano Hana Tempura (RM45), I never knew rape blossoms can taste so good in golden crispy light tempura batter. A squeeze of lemon enhances the freshness of the rape blossoms while the tempura sauce added savory notes. It’s addictively and polishing off this basket of vegetables has never been easier.

While other cuisine may opt to start their course with soup, the Japanese tend to enjoy soup at the end for a comforting ending. The clear clam soup hit all the right notes of soothing and warming flavours on the palate. Such earthy flavours with beautiful bonito essence, the soup with the tender large clams in Hamaguri Jiru (RM28) was divine to the last drop.

Chef Teoh surprises us with an unusual pairing of Sakura Cheese Pudding with Black Sesame Ice Cream in celebration of the hanami. The Sakura cheese pudding is so pretty in pastel pink and tasted delicate and delicious. The nutty and aromatic black sesame seed ice cream is always a pleasant dessert and this one even comes with a pretty fresh Sakura stem on it. Presentation was indeed top-notch!

Genji Japanese @ Hilton Petaling Jaya: Seafood Showcase with Chef Tetsuya Yanagida

An Authentic Japanese Experience with Sustainable IKEJIME Fish

In our world today, there are many things that are disappearing faster than we realize. Food source is one of them. Nature’s food source is crucial to our lives and due to the environmental changes and other arising matters as well as technology evolvement, our food source is fast depleting unless we do something about it.

We enjoy our seafood. In fact, we love it so much, we consume tons of it daily. In order to continue to enjoy our seafood, it’s time to take some responsibility and participate in the sustainable seafood movement. By consuming sustainable seafood, we can be sure that we can still enjoy a variety of seafood in a long time to come.

Starting from 22 August to 11 September, Hilton Petaling Jaya is proud to host a Seafood Showcase with Chef Tetsuya Yanagida at Genji Japanese Restaurant. Available for lunch and dinner, a special menu crafted by Chef Yanagida using sustainable seafood and IKEJIME method is set to tempt diners with gastronomical temptations. Ikejime, originated in Japan, is a special method of paralyzing and cleaning the fish to sustain their freshness longer.

Chef Yanagida, who works as a consultant to the IKEJIME fish project with sustainable seafood supplier GST Fine Foods Sdn Bhd currently, also believes that sustainable caught or farmed seafood is just as good as those raised in the wild. The passionate chef graduated from Chef’s school in Japan and began his career in a 500-seat Japanese restaurant in Tokyo. With more than 24 years of culinary experience, he has worked across Japan and now resides in Malaysia where he has also worked many renowned Japanese restaurants in Kuala Lumpur and has been responsible for these restaurants openings as well.

He has been awarded the honorable Japan Prime Minister Award for Japanese Cuisine Chefs and Occupational Certification as well as the honor of being a licensed FUGU handler (blowfish) who is certified to prepare and sell the poisonous fish.

Together with Genji Head Chef Richard Teoh, diners are certainly in for a delicious treat of gorgeous seafood prepared the authentic Japanese way. Chef Teoh brings with him over 27 years of culinary experience and is renowned for his talents on traditional modern cuisine featuring classic Japanese ingredients crafted with the best of modern Japanese techniques.

GST, Goh Siong Tee Seafood Supplies started in the 90s and the company’s first marine water fishing farm was setup in Penang using marine cage culture method. Today, the farm has one of the largest sea cages and facilitates other farmers in growing their business. The GST Group has received major recognition and accolades both locally as well as internationally.

Seafood Showcase with Chef Yanagida features a premium set of seafood dishes priced at RM168 nett as week as exquisite a la carte dishes that are available fromRM50 nett onwards. The premium set of seafood delights includes an appetizer, Chawan Mushi, Seafood Mushini Hot Pot , rice, IKEJIME fish head miso soup and dessert.

I have always have a soft spot for Genji Japanese Restaurant. One of the first few Japanese restaurants in hotel in Petaling Jaya, food has always been consistently solid. Coupled with Genji’s renovated ambiance, diners can enjoy a solid list of authentic Japanese dishes prepared with a touch of modern presentation and flavors by Chef Richard.

Dinner commenced with an epic presentation of Assorted Sashimi. A selection of the finest fish of IKEJIME Grouper, IKEJIME Red Snapper, Toro, Tuna, Salmon and Marlin is artistically displaying on ice. The sashimi slices is one of the freshest cuts of fish that evening. Toro was sublime and so was the marlin which is so buttery rich and smooth.

Particularly notable is the Ikejime Grouper and Ikejime Red Snapper of course. The texture of the fish is beautifully firm with a good bite and has a natural sweetness of delicate oceanic flavors. One would think that both white fish have been flown in from Japan as the freshness and quality is unbelievably as good as those from Japan!

Next up, Prime IKEJIME Fish Roll with Spring Onion & Chinese Coriander, another dish that showcase how good the fish can be when its prepared Ikejime style. The white fish is marinated with some sauce and rolled up maki style, served with a light drizzle of savory sweet sauce. Fresh and light, the rolls are easy to enjoy.

Another way to enjoy fish is to fry it and Chef Yanagida’s next dish of Deep Fried IKEJIME Grouper with Ginger Flavoured Tabasco Nazu is simple but delicious. Perfectly lightly golden and crispy, the firm grouper fillets are served with a tantalizing and piquant gingery sauce with hints of heat. The drizzle of mayo added richness to the dish as well.

An oceanic treasure pot was next and the Seafood Mushini Hot Pot is certainly a treat of comfort food. Available in two soup base of Shabu or Yuzu broth, the clay pots were filled with IKEJIME Grouper, IKEJIME Red Snapper, Abalone, Scallop, Mussels and assorted Mushrooms.

The Shabu Shabu broth is savory and sweet with a familiar umami note and goes well with the assorted premium seafood. The Yuzu broth was my favorite simply because I love how the citrusy aroma and flavor enhanced the seafood to its maximum sweetness. From the thick cuts of sweet red snapper and grouper fillet to the premium abalone, scallop and mussels, one cannot help but to revel at the full glory of such lavish cuts of seafood. The mushrooms too were delicious after its soaking of the broths. A hot pot worthy of a return visit…

We also enjoy the same seafood prepared in IKEJIME Red Snapper, Abalone, Scallop & Mussels Teppanyaki. Here, the seafood takes on a different flavor and aroma profile as it is chargrilled teppanyaki style with loads of garlic, butter and soy sauce. The smoky flavor profile is superb and elevated the freshness and sweetness of the seafood to such moreish notes. Garlicky savory with a rich buttery note, it’s a full-fledge lip-smacking seafood sensation!

Besides all the Ikejime fish dishes, we also savored a classic Tempura Shishamo. These protein laden fish filled with eggs are lovely with its crispy and natural flavor. Savor this with the tempura sauce for extra yumminess.

The Japanese does a mean Garlic Fried Rice and Genji’s version will have one packing on the carb. Potent with aromatic garlic bits, the fried rice is just as addictive as all the other dishes that evening.

Genji Signature Green Tea Ice Cream to finish up the evening on a fresh and creamy note.
