Yemeni Cuisine @ Al Nafoura, Wangsa Maju

Flavours of Yemeni Cuisine

There aren’t many Yemeni cuisine available here in our Malaysian shores. More widely categorize as Middle Eastern cuisine, Yemeni cuisine is the national cuisine of Yemen. The cuisine uses spices along with meat in most of their dishes. Staple vegetables consist of tomatoes, onions and potatoes. The cuisine also has lots of rice and bread as their daily staples too.

It was my first experience of Yemeni flavours and I am glad it was at Al Nafoura Restaurant. Located in Wangsa Maju, Al Nafourah opened January 2016. Husband and wife team, Rahim and Izana hopes to introduce authentic Yemeni cuisine to diners here as they both enjoy the cuisine very much. Rahim learned to appreciate the cuisine while studying in Saudi Arabia during his younger years.

Everything from décor to menu at Al Nafoura is out together by both Rahim and Izana. While the décor may seemed relatively simple, the ambiance does reflect the culture of the cuisine. Warm terracotta colors are contrasted with soft white while warm yellow lighting sets the mood. Pieces of Middle Eastern art, photos and knick knacks completed the interior.

The menu is decent and filled with photos to assist those who may not be familiar with the cuisine like me. From Chef’s Recommendation to appetizers, Arabic breads, tapas, main dishes to fusion dishes and desserts, Al Nafoura tries to bring in authentic flavours of Yemeni food, said to be influenced from flavours of Africa, India and Turkey. The menu also has vegetarian options.

Arabic breads are simply a must in the cuisine. These are eaten with all the stews and braised dishes. High on the recommended list to try is the Mullawah Bread (RM5 small | RM8 large). The tasty Yemeni bread is a sort of large flat bread layered and folded with ghee and cooked on flat pan. The flat bread is deliciously aromatic and toasty with a lightly flaky texture. It certainly went really well with our dip and prawn stew. This is only available on weekdays for dinner and weekends only.

Hummus (RM12) is made really well here. Garlicky and nutty flavours shined through the creamy bean dip. A light tang of citrus, a dash of olive oil, black sesame and some chopped tomatoes whets the appetite along with the Mullawah bread.

Prawns cooked in a thick and rich tomato stew summed up Prawn Salona (RM22). The balance of spices like cumin and cayenne really added delicious depth of flavours in the stew. This one goes well with rice or bread.

Oqda means ‘knot’ in Arabic and so Chicken Oqda (RM17) is a dish that is tied together with rich spices and vegetables cooked with chicken. Chunky boneless shredded chicken has well absorbed the tomatoey vegetable and spiced up sauce so well. Slap on the bread to pick up the Chicken Oqda for a tasty appetizer treat.

The first main dish to arrive was the Mandi Chicken (RM16 quarter| RM26 half). A whole chicken Maryland is marinated and grilled. The beautiful golden hue denoted the spiced marinade. Served with fluffy saffron Basmati rice and a special curry gravy, the dish is suitable for both adults as well as kids. The chicken is moist and tender with a tasty savory note that is easy to enjoy. There is also a lamb option for this dish.

Another main dish we had is the Kabsa Lamb Rice (RM23 small | RM37 large). The Kabsa lamb stew has large pieces of bone-in lamb in a yellow gravy finished with lots of fresh coriander. Served with a yellow spiced Basmati rice and also a curry gravy, this one is superb. Not a fan of lamb, the lamb stew is really very moreish. The lamb is so tender and melts-in-the-mouth and is well perfumed by spices that there is no meaty lamb smell that is usually present. The rice is also very fluffy and aromatic, making the dish a winner in my books. There is also a chicken option for this one but I highly recommend the lamb.

Do order a side of Garlic Sauce (RM4) to go with the main dishes. Creamy pungent garlicky sauce added a spin of tasty flavours to any dishes at Al Nafoura.

Our limelight of the evening was the house signature Lamb Maghdout (RM39 1/2kg | RM75 1kg) or Chicken (RM35 half | RM65 whole). Lamb is marinated with lots of spices and pressure cooked to delicious tenderness. Coupled with the tomato and spice based Basmati rice, the dish also has lots of raw red onions, fresh coriander and boiled egg.

Al Nafoura has nailed their lamb dishes to perfection. The lamb in this dish is even better than the Kabsa lamb. Gorgeously fork tender, the lamb has sublime spice flavours with a smoky note. The rice is very tasty and fluffy too. The flavours from the pairing is well balanced and scrumptious. Even though I was pretty full, I find myself going back for this dish simply because I really enjoyed the flavours. It takes at least 20 to 30 minutes to prepare this dish but it’s truly well worth the wait.

Order the Al Nafoura Salad (RM10) to go with the main dishes for fresh burst of crunchy vegetables. Chopped tomatoes, cucumbers, onions and olives are lightly seasoned to keep the freshness.

Sahawiq or a tomato salsa is the sauce that really pulls every dish together. It has such a hit of heat from chilies and a pump of robust onions and tomato flavours that had me spooning lots of the sauce on all the main dishes. Damn shiok sauce!

We were told that Rahim came up with Maggi Goreng Kabsa (RM18). Not an authentic one but rather a creative fusion, the noodles turned out to be decent. Nothing to shout about but still, it makes a nice single dish for those who are game to try this. The actual noodle comes with meat while ours had no meat due to our request since we already had so much meat in our mains.

For desserts, we opted to try the Areeka (RM18), a sweet and savory dessert made from homemade wheat flatbread and dates. It has quite a unique flavour and may take work or not with some. The thick cream topping with shredded cheese gave the dish an oddness of flavour. It is also quite rich and heavy so it is best to share this dessert.

I prefer the Kunafe (RM15), a Middle Eastern sweet pastry of golden crispy shredded phyllo stuffed with white soft cheese. This one is crispy and creamy with a luscious cheesy note. Finished with a thick whipped cream, I like the dessert with its gentle sweetness and crispy texture.

Order the refreshing cold Lemon & Mint (RM8) to freshen up the palate or the hot Adani Spice Tea (RM6 – cup | RM12 – teapot) to washed down the richness of the dishes. The tea is similar to our pulled tea except it is spiced with ginger, cloves and cardamom.

Try Yemeni cuisine at least once and you will be surprise at how good the cuisine is. Al Nafoura is a great choice to try the cuisine as the Rahim has really nailed the flavours well. Dishes are affordable and prepared very well. Al Nafoura also does catering for private parties. It may be my first time trying Yemeni cuisine but it will certainly not be my last as Al Nafoura has really left a delicious experience of Yemeni cuisine for me.

Chatz Brasserie, PARKROYAL Kuala Lumpur: Mediterranean and Middle Eastern Affair

Egyptian Guest Chef Ayman Ibrahim Presents a Menu of Sumptuous Mediterranean and Middle Eastern Favorites!

A sumptuous Egyptian, Mediterranean and Middle Eastern menu is now available at all F&B outlets in PARKROYAL Kuala Lumpur till 31 October, 2016. Proudly presenting Egyptian Guest Chef Ayman Ibrahim, diners are in for an exotic treat at Chatz Brasserie, Hot Gossip, Klix Lounge, Pool Bar and even room service.

With a list of over 37 dishes available daily from 12 noon to 12 am daily, diners should not miss this opportunity to savor appetizers, main course and desserts whipped up by Chef Ibrahim right in the middle of our bustling city.

Born in Egypt, Chef Ibrahim has over 25 years of culinary experience in the food industry. Chef Ibrahim has garnered numerous awards internationally as well as locally through his culinary career. He has also appeared in various television programme shows as well as hosting workshops on Middle Eastern cuisine.

Members of the media and bloggers were treated to a sneak preview of what the sumptuous menu by Chef Ibrahim has to offer during these few months at PARKROYAL Kuala Lumpur recently. The evening kicked off with Anab, a Middle Eastern beverage that showcases Hibiscus. Sweet with a subtle tang, it was refreshing and fruity.

For appetizers, there are few classic must-haves when it comes to Mediterranean and Middle Eastern cuisine. The Falafel (RM20) or chickpea croquettes are simply delicious! Great for vegetarians too, these crispy fritters with a creamy and nutty inside are so good when snacking or tuck them into soft warm pita bread for a lovely sandwich.

Chickpeas are used a lot in the Middle Eastern cuisine and the most famous dish that comes to mind would have to be the Hommous (RM16). This creamy, garlicky and nutty dip has such an enticing flavour that it’s quite hard to stop mopping up the dip with warm bread. Chef Ibrahim’s version is superb and delicious.

One should love the freshness and vibrant herb flavours of the Tabouleh (RM20). The dish is one of my favorite as there’s plenty of robust citrusy and herb flavours that really lifts up all the other heavy dips and appetizers in such a cuisine.

Warq Einab (RM22) may not be familiar to many here but this is a classic appetizer that is much beloved in Mediterranean and Middle Eastern cuisine. Brined grape leaves is filled with minced meat and rice and cooked till tender with a lovely lemony tang. It is also similar to the Greek dish of Dolmades.

For soups, we tried a vegetarian and non-vegetarian version of lentil soup. The Shorbah Harirah (RM30) has bits of lamb, chickpeas, assorted lentils and pasta all cooked till very soft and creamy with an earthy nutty note. The Shorbah Adas (RM26) is a vegetarian version and is lighted and has a clean and lighter note of creamy nuttiness.

For mains, there’s certainly plenty of options to choose from.
Lamb is a favorite meat option and so there’s plenty of lamb dishes available on the menu. Savor Lamb Kabsah (RM48), succulent pieces of roasted lamb to be savored with bukhari rice or go for the meaty balls of Lamb Kofta. Both very well cooked, there is really not any gamey aroma but just mouthwatering ones.

If lamb is not your choice, there’s also chicken. Enjoy juicy and well-marinated chooks in Shish Tawook (RM30) or Dajaj Ala Elhaham (RM36). Shish Tawook, skewered chicken cubes are bitey and tasty but it was the Dajaj Ala Elhaham or Grilled Spring Chicken that turned out to be a crowd pleaser. The spices on the spring chicken was moreish and succulent while the meat was tender. Such a great comfort food…

If you prefer seafood, there is also a choice of Samak Mashwi (RM46) or Pan Fried Salmon Fillet with Tahinah or Jambary Mashwi (RM55) which is Grilled Prawns with Saffron Sauce. The crisp fish skin on the salmon is very yummy while the fish was a tad on the dryer side. Nevertheless, the fish is still very tasty. The prawns are superb. Grilled with shells on to retain the juiciness and sweetness of the oceanic note, the prawns are simply a must order here.

All main courses are served with a choice of rice, bread or potatoes.

Stews are quite the popular option in these cuisines and so we also sampled Bamiah Bil Lahm Ejal (RM50) which is Stewed Okra with Beef and Tomato. The stew is not overly heavy and has a nice tang of tomatoey notes. The beef pieces are just as tender as the okra. The dish is great with rice.

Mediterranean and Middle Eastern cuisine does feature lots of lentils and pulses in their cooked and the next dish of Fooll Akhdar (RM28) or Broad Beans stew is a great example. The beans are braised till tender in what looks to be a thin tomato sauce.

To go with all the heavy dishes, there’s choices of Roz Boukhary (RM25) which is Bukhari Rice or Roz Saladiah (RM18) or Fried Onion Rice. There is also Roz Mandy or Smoked Saffron Rice.

One should not end the meal without something sweet. For desserts, there’s the sensational Almond Pudding or Kashul (RM25), the classic and popular Baklava (RM25) or a Semolina Cake called Basbosah (RM18).

Besides a la carte, there is also Middle East Specialities Set Menu which includes one appetizer one soup, a choice of Mandy (RM88nett), Dajaj Kabsah (RM85nett) or Samak Saiadiah (RM85nett) and one dessert. It is available from 12.00pm to 12.000am daily.

This coming holy month of Ramadan, Pullman Kuala Lumpur Bangsar is proud to present this year’s spread of Buka Puasa feast themed Starry Arabian Nights at Link All Day Dining. From 21 June to 16 July 2015, Link culinary team lead by Executive Chef Johann Ong together invited Arabian Chef is set to tempt many with their feast of Arabian and Malay cuisine.

When one mentions of Arabian cuisine, one immediately thinks of the aroma and flavours of spices, herbs, nuts, dates and more. What is today regarded as Malay food is the results of centuries of outside influences where the Malay absorbed a tradition of Arabic dishes.

The Arabs also enjoy a lot of lamb in their cuisine so it is without any doubt that one of the highlights of the Buka Puasa feast is a whole Baby Lamb with Arabian marinade. Slowly grilled over hot charcoal, the lamb fat slowly drips onto the sizzling coals and let the heat steam gently cooked the lamb to keep it nicely moist. Slow cooked for hours, the lamb yields tender meat with aromatic spices.

Another highlight of Middle Eastern cuisine is Shish Tawook which is a traditional shish kebab. Here the chicken kebabs are well marinated and nicely grilled and served with flat bread, fresh vegetables and lemon.

There is also Lamb Kofta of minced lamb shaped into kebabs and grilled. These are juicy and nicely spiced up. Enjoy them with rice or bread and an array of dips and salads.

More meat dishes like Sharwarma, which is a Levantine Arab meat preparation where meat or chicken is marinated, piled on a large skewer and placed on a spit and slowly grilled as the skewer rotates. The meat is then shaved off on the cooked edges and serve stuffed into flat bread together with fresh shredded vegetables.

All these Middle Eastern dishes beckons with classic dips and salads of Hummus, Baba Ghanoush, Tabbouleh, Fattoush, Beetroot Salad, Yoghurt with Cucumber and more. It was a treat of flavours and textures in Arabic cuisine.

More signatures of the buffet include Saffron Rice with Braised Lamb Shoulder, Couscous with Braised Arabian Lamb Shank, Spicy Marinated Sea Bass Fillet, Lamb Meatball Stew and more. The Saffron Rice with Braised Lamb Shoulder is delicious. Fluffy long grain rice nicely flavoured with stock and spices and served with tender lamb shoulder is a dish that is just so good on its own.

Save some room for the King of Fruits, the Durian! Enjoy treats of durian available at the al fresco area of the restaurant.

Besides all the above, there are definitely more dishes of international favorites at all the stylishly designed live cooking stations.

Desserts are going to give everyone a sweet ending! From kuih muih to cakes, puddings, cookies, ice cream and more, it’s going to be a tough choice choosing on the sweet treats. There will also be some Arabian sweets and dates as well.
